Chef Josh Niland, known for his expertise in utilizing every part of a fish, has introduced Fysh, a fish steakhouse, to Singapore. Fysh offers yellowfin tuna cheeseburgers, swordfish Schnitzels for lunch, and grilled sirloins and ribeyes for dinner in the luxurious Singapore Edition hotel. The 400g dry-aged yellowfin tuna ribeye and 450g swordfish sirloin are highly recommended.

Fysh’s menu goes beyond fish, featuring the standout Brown Clams XO with Java clams in a fish-gut-based XO sauce. The Valrhona chocolate macaron with yellowfin tuna eye ice cream may sound unusual, but the fish eye ice cream, acting as an egg substitute, pairs surprisingly well with the chocolate macaron.

For those preferring familiar flavors, the charcoal-grilled game farm quail and the Fysh Egg Tart with creme fraiche and salmon roe are solid choices. To end your meal, try the Fysh martini with Stranger & Sons Gin, Murray Cod Fat, and Fino Sherry Dry Vermouth for a unique and satisfying experience.
