Air at Dempsey Hill sprawls across 40,000 square feet. It has a two-story dining spot, a big green lawn, a spot for research and development, and even its own working garden that grows fresh produce.

Renowned chefs Matthew Orlando and Will Goldfarb, known for their work at Noma and Room4Desserts, teamed up to create this place. They serve modern dishes inspired by Southeast Asia and Europe, using ingredients from their garden.

Orlando believes in making tasty food everyone can enjoy, and he’s also about sustainability. That’s why you can grab a five-course Chef’s Choice meal with desserts for a reasonable S$88 per person. The fermented cassava flatbread with whipped mushroom XO butter is a fantastic way to start, and don’t miss out on the crispy oyster mushrooms. The batter is light, and the mushrooms underneath are firm and delicious.

This historic building, dating back to 1936, once served as a migrant remittance house. Marina Bay Sands has a new culinary gem, Maison Boulud, marking the second outlet after its flagship in Montreal. African restaurants in Singapore are still rare, so the opening of Tamba in Duxton Hill is a reason to celebrate. Kurt Wagner, the owner of the popular Kafe Utu, Singapore’s first African café-restaurant, is also behind Tamba. The vibe at Tamba is just as welcoming and cozy, with rustic decor and thoughtful details.

While Kafe Utu draws inspiration from the entire African continent, Tamba focuses on West African cuisine. You can choose from Jollof rice with sofrito, sakura chicken, and smoked pork belly. Tapalapa bread with goat’s milk ricotta, smoked honey, bacon butter, or Suya – a grilled Angus tenderloin skewer with kachumbari and smoked kuli.

The drink menu is equally exciting, featuring 60 percent African spirits. Award-winning bartender Joma Rivera is responsible for crafting creative cocktails like the savory Dry Boney with a tomato base and Vita, a clarified milk cocktail with cacao butter and fat-washed Mhoba rum from South Africa.

Fat Prince has made way for The Prince in The Dandy Collection’s latest debut. The Prince focuses on Arabian cuisine with a contemporary twist, drawing inspiration from the Arab culture’s spirit of generosity known as ‘karam.’ The Karam menu, priced at S$75 per person, promises a communal dining experience featuring a sharing mezze platter, soup, mains, and dessert.

The mezze platter boasts a dazzling array of nine dishes, including cashew hummus and pumpkin walnut baba ganoush. Before the mains enter, indulge in the Lobster Shorbat Addas, a fragrant lobster soup with spices and lentils. The lamb loin skewer, flambéed at the table, or the Mediterranean Seabass for two, deboned and tangerine and sumac-crusted, are among the tempting main course options. To wrap up the feast, savor the karak tea with fig earl grey ice cream. It’s a culinary journey with a modern twist on traditional Arabian flavors.
