How to make Warabi Mochi?

If you want to improve your culinary skills and make your homemade warabi mochi, prepare several ingredients and be in a good mood – and let this culinary journey begin.

Ingredients for Warabi Mochi:

  • ¾ cup bracken starch (warabiko)
  • ½ cup sugar
  • 1¾ cups water

For the Toppings:

  • ¼ cup roasted soybean flour (kinako)
  • black sugar syrup (kuromitsu)

Warabi Mochi Recipe:

  1. Gather all the ingredients together. Sprinkle kinako powder on a baking sheet.
  2. Add warabiko, sugar, and water into a saucepan and mix them until the warabi mochi mixture becomes smooth.
  3. Heat the warabi mochi mixture over medium heat until it starts to boil. Then, reduce the heat and stir continuously with a wooden spatula for ten minutes (or until the mixture is thick).
  4. Remove the mixture from the heat. Pour it onto the baking sheet. Sprinkle more kinako on warabi mochi. Leave it in the refrigerator for about 20 minutes to cool down.
  5. When warabi mochi is cool enough, cut the dessert into bite-sized square pieces. Cover all surfaces of the warabi mochi with kinako powder – and you can serve it! Add kuromitsu to taste. Bon Appetit!

We should note that 100% warabi starch is quite expensive and hard to get (even in Japan). So, why is warabi mochi so expensive? Now you know the answer. You can replace it with tapioca starch, kudzu starch, potato starch, or experiment with other substitutions.
